January 10, 2013 - Kale Salad with Annies Roasted Pepper dressing and Spicy Salmon
So I had these veggies in my fridge and a salmon in the freezer I wanted to eat, because last week was crazy! I am sure, well maybe you haven't but the flu and cold have been going around like crazy and in order not to get it you have to bob and weave! Just kidding, but you do have to keep your immunity up and healthy! I learned it is better to take vitamins (that reminds me, I need to take mine before bedtime) everyday then to battle a cold and flu and be stuck with medicines that only push down the illness instead of treat it AND cause cancer later in life! Anyhow, let's get to what I made today and I just had some salad, DELICIOUS! And will take the Salmon and salad to work tomorrow.
First if you have salmon in the freezer take it out the night before and allow it to thaw, this is better then putting it in the microwave and accidently
cooking it, not only will the microwave smell, but so will the entire house. If you just bought the fish fresh then no problem.
For Salmon You Will Need:
1 Salmon
1-2 Garlic Cloves
Red Cayenne Pepper
1/2 Lemon
1 Hungarian Pepper
1. Turn the oven on to 350
2. Get aluminum foil and place in a cookie sheet
3. Turn the edges up so the juices will stay in the foil
4. Rinse the salmon under cold water
5. Remove access water from the salmon
6. Place the salmon on the foil
7. With a knife make slits in the salmon
8. Cut up the lemon and squeeze the juice between the slits on the fish. Make sure you take the seeds off the fish, you don't want your guest to eat them.
9. Shake some Red Cayenne Pepper on the Salmon
10. Cut up 1 - 2 garlic cloves and add the salmon, put some cut up pieces of the garlic in between the slits of the salmon.
11. Slice and de seed one Hungarian Pepper. Then cut the pepper into slices and put on the salmon.
12. Put the salmon in the oven for 35-40 min at 350 degrees. Remember the time will determine if you live in a lower or elevated area, I am at sea level.
While the salmon is cooking we can begin working on the Kale Salad.
What You will Need:
1 Bunch of Kale (you may not use it all - you can vary this to your discretion)
1 Red pepper
4 Stalks of Celery
1 Tomato
1- 2 Oranges
2 TBSP Annies Roasted Red Pepper Dressing.
1. Rinse the Kale and then either cut it or tear it and put it in a bowl after drying the leafs. (you can add the stems)
2. Wash and cut slice the tomato, then add to the kale
3. Wash and cut the red pepper and add to the mixture
4. Wash and cut the celery and add to the mixture
5. Cut an orange in 2 and juice the orange using a hand or electric juicer
6. Add the orange juice to the mixture and mix.
7. Add Annie's Roasted Pepper Dressing and enjoy!
